Ingredients
  

  • 4 breasts boneless, skinless chicken
  • 1 cup ripe strawberries hulled and halved
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup balsamic vinegar
  • 2 tablespoons honey

Method
 

  1. In a bowl or resealable bag, combine chicken breasts with olive oil, salt, and pepper. Let marinate for at least 30 minutes.
  2. Wash and hull strawberries, then slice in half.
  3. In a small saucepan over medium heat, mix balsamic vinegar and honey. Simmer for about 5 minutes until slightly thickened.
  4. Heat grill to medium-high (375°F/190°C).
  5. Place marinated chicken on one side of the grill and strawberries on the other. Grill chicken for 6-8 minutes per side or until it reaches an internal temperature of 165°F (75°C). The strawberries should soften and caramelize.
  6. Drizzle balsamic sauce over grilled chicken and strawberries before serving.
