  • 1 can black beans rinsed and drained
  • 1 can corn rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup red bell pepper diced
  • ½ cup red onion finely chopped
  • ¼ cup cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, lime juice, cumin, salt, and black pepper to create the dressing.
  3. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
