Ingredients
  

Chicken and Vegetables
  • 1 lb boneless chicken breast sliced into strips
  • 1 tablespoon olive oil
  • 1 medium bell pepper sliced
  • 1 medium onion sliced
  • 1 tablespoon fajita seasoning store-bought or homemade
Tortillas and Toppings
  • 4 pieces flour tortillas or corn tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup guacamole

Method
 

Prepare the Chicken and Vegetables
  1. Preheat the Blackstone griddle over medium-high heat.
  2. In a bowl, combine sliced chicken, olive oil, and fajita seasoning. Mix well to coat the chicken.
  3. Add sliced bell pepper and onion to the bowl and toss to combine.
Cook the Fajitas
  1. Once the griddle is hot, add the chicken mixture and spread it out evenly.
  2. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are tender.
  3. Warm the tortillas on the griddle for about 1 minute on each side.
Serve
  1. Remove the chicken and vegetables from the griddle and serve with warm tortillas and toppings.
