Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
  • 1 tablespoon olive oil for cooking
For the Bourbon Glaze
  • ½ cup bourbon or whiskey
  • ¼ cup brown sugar packed
  • ¼ cup soy sauce low sodium recommended
  • 2 tablespoons Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon cornstarch for thickening
  • 1 tablespoon water for cornstarch slurry

Method
 

Prepare the Glaze
  1. In a saucepan over medium heat, combine bourbon, brown sugar, soy sauce, Dijon mustard, garlic, and ginger. Bring to a simmer and cook for 5 minutes.
  2. In a small bowl, mix cornstarch and water to create a slurry. Add to the saucepan and stir until the glaze thickens, about 2 minutes.
Cook the Salmon
  1. Heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper.
  2. Place salmon in the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy.
  3. Flip the salmon and brush the bourbon glaze over the top. Cook for an additional 3-4 minutes until cooked through.
Serve
  1. Remove salmon from the skillet and drizzle with extra glaze. Serve immediately with your choice of sides.

Notes
