Ingredients
  

  • 2 cups fresh broccoli florets (about 150g)
  • 1 cup shredded carrots (about 120g)
  • 1 cup shredded cabbage (about 70g)
  • ½ medium red onion thinly sliced
  • ¼ cup pure maple syrup (60ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 tablespoon Dijon mustard

Method
 

  1. Wash all vegetables thoroughly. Chop broccoli into bite-sized florets and shred the carrots and cabbage finely using a box grater or food processor.
  2. Thinly slice the red onion horizontally.
  3. In a bowl, whisk together maple syrup, apple cider vinegar, Dijon mustard, and olive oil until smooth.
  4. In a large mixing bowl, toss broccoli florets, shredded carrots, cabbage, and red onion together. Pour the dressing over the salad and mix until evenly coated.
  5. Cover the slaw and refrigerate for at least one hour to let flavors meld.
  6. Give the slaw a final toss before transferring to plates or a serving bowl.
