Method
Prepare the Brown Butter
- In a saucepan over medium heat, melt the butter until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
Mix Wet Ingredients
- In a mixing bowl, combine the browned butter, pumpkin puree, brown sugar, granulated sugar, egg, and vanilla extract. Whisk until smooth.
Combine Dry Ingredients
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
Combine Mixtures
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in chocolate chips or nuts.
Bake the Cookies
- Preheat the oven to 350°F (175°C). Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
