Ingredients
  

Salad Base
  • 6 cups mixed greens such as romaine and spinach
  • 1 cup cherry tomatoes halved
  • 1 avocado avocado diced
  • 1 cup cucumber sliced
Protein and Toppings
  • 2 cups grilled chicken sliced
  • 4 slices bacon cooked and crumbled
  • ½ cup blue cheese crumbled
  • 2 hard-boiled eggs sliced
Dressing
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • salt to taste salt

Method
 

Prepare the Ingredients
  1. Grill the chicken until fully cooked, then slice it.
  2. Cook the bacon until crispy, then crumble it.
  3. Hard boil the eggs, cool, peel, and slice them.
  4. Prepare the vegetables by washing and chopping them as needed.
Assemble the Salad
  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, avocado, and cucumber.
  2. Top the salad with sliced grilled chicken, crumbled bacon, blue cheese, and sliced eggs.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
Serve
  1. Drizzle the dressing over the salad just before serving and toss gently to combine.

Notes

For a vegetarian option, omit the chicken and bacon and add more beans or nuts for protein.
