Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • ¼ cup bread crumbs preferably Italian seasoned
  • 1 large egg
  • 2 cloves garlic minced
  • ¼ cup parmesan cheese grated
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Orzo and Sauce
  • 1 cup orzo pasta
  • 4 cups chicken broth low sodium
  • 1 cup spinach fresh, chopped
  • 1 cup tomato sauce preferably homemade or low sugar
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground chicken, bread crumbs, egg, garlic, parmesan cheese, oregano, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  3. Bake the meatballs in the preheated oven for 20 minutes or until cooked through.
Cook the Orzo
  1. In a pot, bring the chicken broth to a boil. Add the orzo and cook according to package instructions until al dente.
  2. Stir in the spinach and tomato sauce, and cook for an additional 2-3 minutes until the spinach is wilted.
Combine and Serve
  1. Once the meatballs are done, add them to the pot with the orzo and sauce. Stir gently to combine.
  2. Drizzle with olive oil and sprinkle with dried basil before serving.
