Ingredients
  

Chicken Marinade
  • 1 lb chicken breast cut into strips
  • 2 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic minced
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
Peanut Sauce
  • 1 cup peanut butter smooth
  • ¼ cup soy sauce
  • ¼ cup coconut milk
  • 2 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha optional for heat
  • 1 clove garlic minced
Garnish
  • 2 tablespoon chopped peanuts for topping
  • 2 tablespoon fresh cilantro chopped

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine soy sauce, vegetable oil, brown sugar, lime juice, garlic, coriander, cumin, and turmeric. Add chicken strips and marinate for at least 30 minutes.
  2. Soak skewers in water for 30 minutes if using wooden skewers.
Make the Peanut Sauce
  1. In a bowl, whisk together peanut butter, soy sauce, coconut milk, brown sugar, lime juice, sriracha, and garlic until smooth.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Thread marinated chicken onto skewers.
  2. Grill skewers for 5-7 minutes on each side or until cooked through.
Serve
  1. Serve chicken satay with peanut sauce drizzled on top and garnish with chopped peanuts and cilantro.
