Ingredients
  

Dry Ingredients
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup canned pumpkin puree
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup chocolate chips semi-sweet

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the wet ingredients: pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the chocolate chips.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  2. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
