Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
Flavoring
  • ¼ cup fresh cilantro chopped
  • 1 lime lime juice freshly squeezed
  • 1 teaspoon lime zest

Method
 

Cook the Rice
  1. In a pot, combine the rinsed rice, water, olive oil, and salt. Bring to a boil over medium-high heat.
  2. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
Add Flavor
  1. Remove the pot from heat and let it sit covered for 5 minutes.
  2. Fluff the rice with a fork and stir in the chopped cilantro, lime juice, and lime zest until well combined.
