Ingredients
  

  • 1 cup quinoa rinsed
  • 1 cup diced cucumber
  • 1 cup diced red bell pepper
  • 1 cup segmented citrus fruits (oranges, grapefruits)
  • 2 tablespoons chopped fresh mint or cilantro
  • 3 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • Juice of 1 lemon or orange
  • Salt and pepper to taste

Method
 

  1. Rinse quinoa under cold water to remove bitterness. Cook in a medium saucepan with 2 cups of water; bring to a boil, then reduce heat and cover for about 15 minutes until fluffy.
  2. While quinoa cooks, chop cucumber, bell pepper, and segment citrus fruits into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, honey or maple syrup, citrus juice, salt, and pepper for dressing.
  4. Once cooked quinoa cools slightly, combine it with diced veggies and citrus in a large bowl. Drizzle dressing over the top and toss gently.
  5. Sprinkle with fresh herbs before serving.

Notes
