Ingredients
  

  • 2 lbs Yukon Gold potatoes
  • ½ cup mayonnaise
  • 2 tablespoon Dijon mustard
  • 1 cup chopped celery
  • ½ cup diced dill pickles
  • ¼ cup finely chopped red onion
  • Salt and pepper to taste
  • Fresh herbs (dill or parsley) for garnish (optional)

Method
 

  1. Wash and peel the potatoes if desired. Cut into 1-inch chunks and place in a large pot of cold salted water.
  2. Bring to a boil over high heat, then reduce to medium and cook for 10-15 minutes until fork-tender. Drain and cool.
  3. In a bowl, mix mayonnaise, mustard, salt, and pepper until smooth.
  4. In a large bowl, combine cooled potatoes, celery, pickles, and onion. Gently fold in the dressing until evenly coated.
  5. Chill for at least an hour before serving to allow flavors to meld.
