  • 1 cup fresh clementine juice
  • ½ cup simple syrup made from equal parts sugar and water
  • 2 cups champagne or sparkling wine
  • 1 cup soda water
  • fresh mint leaves for garnish

Method
 

Preparation
  1. Prepare simple syrup by combining equal parts sugar and water (1 cup each) in a saucepan over medium heat. Stir until dissolved and let cool.
  2. Juice the clementines until you have 1 cup of fresh juice. Strain if desired.
  3. In a large pitcher, mix the clementine juice with simple syrup.
  4. Fill glasses with ice, then pour in equal parts of the clementine mixture and champagne until two-thirds full.
  5. Top each glass with soda water and stir gently.
  6. Garnish with fresh mint leaves before serving.
