Ingredients
  

  • 4 fillets salmon 6 oz each
  • 1 cup BBQ sauce
  • 2 fresh jalapeños halved
  • 2 ripe peaches diced
  • 1 cup cooked rice white or brown
  • ¼ cup fresh cilantro chopped (optional)
  • 1 juice lime
  • salt to taste
  • pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets on the baking sheet and brush generously with BBQ sauce.
  3. Add jalapeño halves to the baking sheet alongside the salmon.
  4. Roast for about 15 minutes until salmon is flaky and jalapeños are tender.
  5. While roasting, combine diced peaches, roasted jalapeños, cilantro, lime juice, salt, and pepper in a bowl to make the salsa.
  6. Prepare rice according to package instructions.
  7. To serve, place a scoop of rice in bowls topped with crispy salmon and peach salsa.
