  • 1 sheet flaky pastry
  • 500 g white fish fillets (cod/haddock) cut into chunks
  • 200 g prawns fresh or frozen
Sauce and Vegetables
  • 2 teaspoon curry powder
  • 400 ml coconut milk
  • 1 medium onion finely chopped
  • 1 cup frozen peas
  • 2 teaspoon olive oil for sautéing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat 2 teaspoon olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the fish and prawns, cooking gently until the seafood turns opaque (about 5 minutes).
  4. Pour in the coconut milk and sprinkle with curry powder, stirring to combine. Let simmer for about 3 minutes.
  5. Stir in the frozen peas and cook for an additional 2 minutes.
  6. Transfer the mixture to a baking dish, cover with flaky pastry, sealing the edges and cutting slits for steam.
  7. Bake in the preheated oven for 25-30 minutes until golden brown.
