Ingredients
  

  • 3 breasts boneless, skinless chicken diced
  • 2 cups cauliflower rice fresh or frozen
  • 1 each red bell pepper sliced
  • 1 each green bell pepper sliced
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 2 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add diced chicken and season with salt, pepper, cumin, paprika, and chili powder. Sauté until golden brown and cooked through (7-8 minutes).
  2. Add chopped onion and bell peppers; cook for about 5 minutes until softened.
  3. Stir in minced garlic; sauté for another minute until fragrant.
  4. Mix in cauliflower rice and additional spices if desired. Cook for another 5 minutes until everything is heated through.
  5. Remove from heat, garnish with fresh cilantro, and serve hot with lime wedges on the side.
