- Thoroughly wash the collard greens to remove grit. Remove tough stems and chop leaves into bite-sized pieces.
- In a large pot over medium heat, sauté the chopped onion in 2 tablespoons olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
- Stir in the smoked ham hock and pour in the chicken broth. Bring to a gentle boil.
- Add collard greens and red pepper flakes; season with salt and pepper to taste. Reduce heat to low and cover.
- Simmer for about 45 minutes to 1 hour until the greens are tender.
