  • 1 bunch collard greens (about 1 pound)
  • 1 piece smoked ham hock
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • ½ teaspoon red pepper flakes

  1. Thoroughly wash the collard greens to remove grit. Remove tough stems and chop leaves into bite-sized pieces.
  2. In a large pot over medium heat, sauté the chopped onion in 2 tablespoons olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in the smoked ham hock and pour in the chicken broth. Bring to a gentle boil.
  4. Add collard greens and red pepper flakes; season with salt and pepper to taste. Reduce heat to low and cover.
  5. Simmer for about 45 minutes to 1 hour until the greens are tender.
