Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth low sodium
  • 1 cup salsa your choice of heat level
  • 1 packet taco seasoning
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup bell pepper chopped

Method
 

Cooking Instructions
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Pour the chicken broth and salsa over the chicken.
  3. Sprinkle the taco seasoning on top.
  4. Add the black beans, corn, and chopped bell pepper.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  6. Once cooked, shred the chicken with two forks and stir to combine.
  7. Serve warm with your choice of toppings such as cheese, avocado, or cilantro.
