  • 2 lbs baby potatoes (red or gold)
  • 4 sprigs fresh rosemary, chopped
  • 4 sprigs fresh thyme, chopped
  • 4 cloves garlic, whole
  • 3 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly.
  3. Gently smash each potato using the bottom of a glass or potato masher.
  4. Arrange smashed potatoes on a parchment-lined baking sheet. Drizzle with olive oil, sprinkle with rosemary, thyme, garlic cloves, salt, and pepper.
  5. Roast for 25-30 minutes until golden brown and crispy.
  6. Serve hot, optionally drizzling with more olive oil or garnishing with fresh herbs.
