Ingredients
  

Cake Layers
  • 4 cups all-purpose flour sifted
  • 2 cups granulated sugar
  • 1 cup unsalted butter softened
  • 1 cup whole milk room temperature
  • 8 large eggs room temperature
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
Buttercream Frosting
  • 2 cups unsalted butter softened
  • 8 cups powdered sugar sifted
  • 1 cup heavy cream room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
Decorations
  • 1 cup fondant for covering
  • 1 cup edible flowers for decoration
  • 1 cup gold leaf optional

Method
 

Prepare Cake Layers
  1. Preheat the oven to 350°F (175°C). Grease and flour the cake pans.
  2. In a stand mixer, cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk.
  6. Divide the batter evenly among the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare Buttercream Frosting
  1. In a stand mixer, beat the softened butter until creamy.
  2. Gradually add powdered sugar, mixing on low speed until combined.
  3. Add heavy cream, vanilla, and salt, and beat on high until fluffy.
Assemble and Decorate Cake
  1. Level the cooled cake layers using a cake leveler.
  2. Place the first layer on a cake board and spread a layer of buttercream on top.
  3. Repeat with remaining layers, finishing with the top layer.
  4. Cover the entire cake with a thin layer of buttercream to create a crumb coat.
  5. Chill the cake in the refrigerator for 30 minutes to set the crumb coat.
  6. Apply a final layer of buttercream and smooth the sides and top.
  7. Cover the cake with fondant and decorate with edible flowers and gold leaf as desired.
