  • 10 pieces fresh corn tortillas
  • 2 cups Oaxaca cheese, shredded
  • 1 cup Chihuahua cheese, shredded
  • 2 cups red chile sauce homemade or canned
  • 1 medium onion, finely chopped
  • ¼ cup vegetable oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, heat the vegetable oil. Lightly fry each corn tortilla for about 10-15 seconds on each side until pliable.
  3. Spread a spoonful of red chile sauce on each tortilla. Add Oaxaca and Chihuahua cheese along with chopped onions, then roll the tortillas tightly.
  4. Place rolled enchiladas seam-side down in a greased baking dish. Pour remaining red chile sauce over them.
  5. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake uncovered for an additional 10 minutes until bubbly.
  6. Serve hot with extra cheese or cilantro as desired.
