Ingredients
  

Tortellini
  • 16 oz frozen cheese tortellini or any preferred filling
Vegetables
  • 2 cups fresh spinach washed and chopped
  • 2 cloves garlic minced
Dairy
  • ½ cup Parmesan cheese grated
  • 2 tablespoon butter
Seasoning
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 tablespoon olive oil

Method
 

Cook Tortellini
  1. Bring a large pot of salted water to a boil. Add the frozen tortellini and cook according to package instructions, usually about 3-5 minutes, until they float to the top.
Sauté Spinach
  1. In a skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
Combine and Serve
  1. Drain the tortellini using a colander and add them to the skillet with the spinach. Toss gently to combine.
  2. Sprinkle grated Parmesan cheese on top and serve immediately.
