Ingredients
  

Cake Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup milk room temperature
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
Frosting
  • 1 cup heavy cream chilled
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
Fruit Topping
  • 1 cup strawberries sliced
  • 1 cup kiwi sliced
  • 1 cup blueberries
  • 1 cup banana sliced

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Beat with an electric mixer until smooth.
  4. Divide the batter evenly between the prepared pans and smooth the tops.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Make the Frosting
  1. In a chilled bowl, whip the heavy cream until soft peaks form.
  2. Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
Assemble the Cake
  1. Once the cakes are completely cool, place one layer on a serving plate.
  2. Spread a layer of whipped cream frosting on top, then add a layer of mixed fruits.
  3. Place the second cake layer on top and frost the top and sides with the remaining whipped cream.
  4. Decorate with additional fruit on top as desired.
  5. Slice and serve the cake chilled.
