Method
Prepare the Cake
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Add softened butter, milk, eggs, and vanilla extract. Beat with an electric mixer until smooth.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Make the Frosting
- In a chilled bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
Assemble the Cake
- Once the cakes are completely cool, place one layer on a serving plate.
- Spread a layer of whipped cream frosting on top, then add a layer of mixed fruits.
- Place the second cake layer on top and frost the top and sides with the remaining whipped cream.
- Decorate with additional fruit on top as desired.
- Slice and serve the cake chilled.
