Ingredients
  

Casserole Base
  • 2 cups shredded cooked chicken rotisserie chicken works well
  • 1 can green enchilada sauce about 10 oz
  • 1 cup sour cream
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 8 corn tortillas corn tortillas cut into strips
Toppings
  • ¼ cup chopped fresh cilantro for garnish
  • 1 medium sliced jalapeño optional

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, green enchilada sauce, and sour cream.
  3. In the baking dish, layer half of the tortilla strips, followed by half of the chicken mixture, and half of the cheese.
  4. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  5. Cover the dish with aluminum foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let it cool for a few minutes.
  2. Garnish with chopped cilantro and sliced jalapeño before serving.
