Ingredients
  

Steak
  • 2 pounds flat iron steak trimmed of excess fat
Marinade
  • ¼ cup soy sauce low sodium preferred
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon dried thyme
Vegetables
  • 2 cups mixed bell peppers sliced
  • 1 cup zucchini sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Marinate the Steak
  1. In a mixing bowl, whisk together soy sauce, olive oil, red wine vinegar, minced garlic, black pepper, and dried thyme.
  2. Place the flat iron steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, or up to overnight.
Prepare the Vegetables
  1. In a bowl, toss the sliced bell peppers and zucchini with olive oil, salt, and black pepper.
  2. Preheat the grill to medium-high heat.
Grill the Steak and Vegetables
  1. Remove the steak from the marinade and discard the marinade. Grill the steak for about 5-7 minutes on each side, or until it reaches your desired doneness (135°F for medium-rare).
  2. During the last 5 minutes of grilling, add the vegetables to the grill and cook until tender and slightly charred.
Serve
  1. Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain.
  2. Serve the sliced steak with the grilled vegetables on the side.

Notes
