Ingredients
  

Taco Filling
  • 1 lb ground chicken
  • 1 tablespoon olive oil for cooking
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup chicken broth or water
  • 8 small taco shells soft or hard
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • ½ cup sour cream optional
  • ¼ cup sliced jalapeños optional

Method
 

Prepare the Filling
  1. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Add ground chicken to the skillet, breaking it apart with a spatula. Cook until browned.
  4. Stir in chili powder, cumin, paprika, salt, and black pepper. Mix well.
  5. Pour in chicken broth and simmer for 5 minutes until the mixture thickens.
Assemble Tacos
  1. Warm taco shells according to package instructions.
  2. Fill each taco shell with the ground chicken mixture.
  3. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and jalapeños as desired.
  4. Serve immediately and enjoy!
