Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup crushed pineapple drained
  • ½ cup coconut flakes sweetened
  • ½ cup unsalted butter softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • ½ teaspoon salt
Frosting
  • 1 cup cream cheese softened
  • ½ cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the crushed pineapple and milk until well combined.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the coconut flakes.
  8. Pour the batter into the prepared baking pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool completely in the pan on a wire rack.
Frosting Preparation
  1. In a mixing bowl, beat together the softened cream cheese and butter until smooth.
  2. Gradually add the powdered sugar, mixing until fully incorporated.
  3. Add the vanilla extract and milk, mixing until the frosting is light and fluffy.
  4. Once the cake is completely cool, spread the frosting evenly over the top.
