Ingredients
  

Chicken Marinade
  • 4 pieces chicken breasts boneless, skinless
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice freshly squeezed
Salad Ingredients
  • 4 cups mixed greens spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • ½ cup red onion thinly sliced
  • ¼ cup feta cheese crumbled
Vinaigrette
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  3. Remove from grill and let rest for 5 minutes before slicing.
Prepare the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper to make the vinaigrette.
  3. Drizzle the vinaigrette over the salad and toss to combine.
Assemble the Dish
  1. Slice the grilled chicken and place it on top of the salad. Serve immediately.
