  • 4 cups fresh peaches sliced
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
Topping
  • 1 cup oats rolled
  • ½ cup whole wheat flour
  • ¼ cup coconut oil melted
  • ¼ cup honey or maple syrup
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine sliced peaches, honey, cinnamon, and lemon juice. Toss to coat evenly.
Make the Topping
  1. In another bowl, mix oats, whole wheat flour, melted coconut oil, honey, baking powder, and salt until combined.
Assemble and Bake
  1. Spread the peach mixture evenly in a baking dish. Sprinkle the topping over the peaches. Bake for 30 minutes or until the topping is golden brown.
