Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1 cup oats rolled or quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree canned or homemade
  • ½ cup honey or maple syrup
  • ¼ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a mixing bowl, combine all the dry ingredients and whisk together until well mixed.
  3. In another bowl, mix together the wet ingredients until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  2. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
