Ingredients
  

Vegetables
  • 1 cup Carrots, diced
  • 1 cup Peas
  • 1 cup Sweet potatoes, cubed
Proteins
  • 1 cup Cooked chicken, shredded
  • 1 can Chickpeas, drained and rinsed
Grains
  • 1 cup Brown rice, cooked
  • 1 cup Quinoa, cooked
Dairy
  • 1 cup Greek yogurt for serving
Spices and Condiments
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste

Method
 

Prepare the Vegetables
  1. Preheat the oven to 400°F (200°C). Toss the sweet potatoes, carrots, and peas with olive oil, garlic powder, paprika, and salt. Spread them on a baking sheet.
  2. Roast the vegetables in the oven for 25 minutes or until tender.
Combine Ingredients
  1. In a large mixing bowl, combine the cooked chicken, chickpeas, brown rice, and quinoa.
  2. Once the vegetables are done, add them to the bowl and mix well.
Serve
  1. Serve the mixture warm, topped with a dollop of Greek yogurt.
