  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 2 medium zucchini grated
  • cup honey
  • ¼ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Add-ins
  • ½ cup walnuts chopped
  • ½ cup raisins

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a mixing bowl, combine the dry ingredients: whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, mix the wet ingredients: grated zucchini, honey, applesauce, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in any optional add-ins like walnuts or raisins.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
