- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Season the chicken breasts with taco seasoning and cut them into bite-sized pieces.
- In a skillet over medium heat, sauté the onions and bell peppers until tender (about 5-7 minutes).
- In the prepared baking dish, layer sautéed vegetables followed by chicken pieces. Pour the chicken broth over the top and dollop with sour cream. Finish with shredded cheese.
- Cover with foil and bake for 25 minutes; then remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
- Allow it to cool slightly before serving.
