Ingredients
  

Chicken Thighs
  • 4 pieces bone-in, skin-on chicken thighs
Herbs and Seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Vegetables
  • 2 cups seasonal vegetables (e.g., carrots, zucchini) chopped

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, rosemary, thyme, garlic, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the herb mixture.
Roast the Chicken
  1. Place the chicken thighs skin-side up in a roasting pan.
  2. Surround the chicken with the chopped seasonal vegetables.
  3. Roast in the preheated oven for 40-45 minutes, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the oven and let it rest for 5 minutes before serving.
  2. Serve the chicken thighs with the roasted vegetables.
