Toss & Roast: Place carrots directly on the sheet pan. Drizzle with 2 tablespoons olive oil, 1.5 tablespoons honey, ground cumin, ground coriander, fresh thyme leaves, salt, and black pepper. Toss until evenly coated. Spread in a single layer with space between them. Roast for 25 to 30 minutes, tossing halfway through, until fork-tender with deeply browned, blistered caramelized edges.
Make Whipped Feta: While carrots roast, place crumbled feta cheese, Greek yogurt, 2 tablespoons olive oil, fresh lemon juice, lemon zest, minced garlic, and black pepper into a food processor. Blend on high for 2 to 3 minutes, scraping down sides, until completely light, fluffy, and silky smooth.
Glaze Hot Carrots: Remove roasted carrots from the oven. Immediately brush or toss them with the remaining 1 tablespoon of wildflower honey and a pinch of flaky sea salt while hot.
Assemble Platter: Spoon the creamy whipped feta onto a large serving platter and use the back of a large spoon to create generous swooshes and swirls. Arrange the warm, glistening roasted carrots artfully over the whipped feta.
Garnish & Serve: Drizzle with any extra pan glaze or a touch of hot honey. Scatter chopped toasted pistachios, fresh pomegranate seeds, thyme sprigs, and red pepper flakes over top. Serve immediately with warm charred pita bread.
