  • 2 tablespoon low-sodium soy sauce

  • 1 cup white rice uncooked
  • 2 pieces ripe avocados
  • ¼ cup fresh cilantro chopped

Cooking Steps
  1. Combine lime juice, honey, minced garlic, and soy sauce in a bowl. Add the chicken breasts and marinate for at least 30 minutes.
  2. Prepare white rice according to package instructions. Fluff and let cool slightly.
  3. Grill or sauté marinated chicken over medium-high heat for about 6-7 minutes per side until golden brown and cooked through (165°F internal temperature).
  4. Mash avocados with remaining lime juice in a bowl to prevent browning.
  5. On plates or bowls, layer rice, mashed avocado, and sliced grilled chicken. Drizzle with any remaining marinade if desired.
  6. Top with fresh cilantro before serving warm or at room temperature.
