Ingredients
  

Base Ingredients
  • 10 pieces fresh chili peppers such as jalapeños or habaneros
  • 1 cup white vinegar
  • 1 teaspoon salt
  • 1 tablespoon sugar optional, to balance heat
Optional Ingredients
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika for a smoky flavor

Method
 

Prepare the Peppers
  1. Remove the stems from the chili peppers and chop them roughly.
Blend Ingredients
  1. In a blender, combine the chopped chili peppers, vinegar, salt, sugar, and any optional ingredients.
  2. Blend until smooth.
Cook the Sauce
  1. Pour the blended mixture into a saucepan and bring to a simmer over medium heat.
  2. Cook for about 20 minutes, stirring occasionally.
Bottle the Sauce
  1. Allow the sauce to cool slightly before transferring it to a bottle.
  2. Store in the refrigerator for up to 2 months.
