Kid Approved Cheesy Chicken Quesadillas

Ingredients
  

Quesadilla Filling
  • 2 cups Cooked Chicken Shredded or diced
  • 1 cup Shredded Cheddar Cheese Or cheese of choice
  • 1 cup Bell Peppers Diced, any color
  • 1 cup Corn Frozen or canned
  • 1 teaspoon Taco Seasoning Optional for flavor
For Cooking
  • 8 pieces Flour Tortillas 8-inch size
  • 2 tablespoons Olive Oil For frying

Method
 

Prepare the Filling
  1. In a bowl, combine the cooked chicken, cheddar cheese, bell peppers, corn, and taco seasoning. Mix well.
Assemble the Quesadillas
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Place one tortilla in the skillet.
  2. Spread a portion of the filling over half of the tortilla, then fold the tortilla over to cover the filling.
  3. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted. Remove from skillet and repeat with remaining tortillas and filling.
Serve
  1. Cut the quesadillas into wedges and serve warm with salsa or sour cream if desired.
