  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon zest Freshly grated

Method
 

Baking Instructions
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together milk, maple syrup, egg, vanilla extract, and lemon zest.
  4. Pour the wet mixture into the dry ingredients and stir until combined.
  5. Gently fold in the blueberries.
  6. Spoon the mixture into a muffin tin lined with paper liners.
  7. Bake for 25 minutes or until golden brown and set.
  8. Allow to cool before removing from muffin tin.
