  • 4 breasts boneless, skinless chicken
  • 1 cup orzo pasta
  • 2 large fresh lemons juiced and zested
  • 4 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach packed
  • 2 tablespoon extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Chop the chicken into bite-sized pieces and mince the garlic.
  2. In a large skillet over medium heat, warm the olive oil. Add the chicken, season with salt and pepper, and sauté until golden brown (5-7 minutes).
  3. Stir in the minced garlic for one minute until fragrant. Add orzo pasta and pour in chicken broth along with lemon juice.
  4. Bring to a gentle simmer, cover, and cook for 10-12 minutes until orzo is tender.
  5. Remove the lid, stir in spinach until wilted (about 2 minutes).
  6. Serve garnished with lemon zest and a drizzle of olive oil.
