Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Wet Ingredients
  • ½ cup buttermilk
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Add-ins
  • ½ cup mini chocolate chips optional
  • ½ cup blueberries optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the wet ingredients: buttermilk, vegetable oil, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in any optional add-ins like mini chocolate chips or blueberries.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  2. Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  3. Remove from the oven and let cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
