Crisp Bacon & Build Roux
- Crisp Beef Bacon: In a large Dutch oven over medium heat, cook diced halal beef bacon for 5 to 7 minutes until deeply browned and crisp. Transfer with a slotted spoon to a paper towel-lined plate, reserving 1 tablespoon of drippings in the pot.
- Sauté Aromatics & Roux: Melt butter into the reserved drippings over medium heat. Add diced onion and cook for 4 minutes until translucent. Stir in minced garlic and cook 1 minute until fragrant. Sprinkle in flour and whisk constantly for 2 minutes to cook out raw flour taste.
Simmer & Mash Potatoes
- Simmer Potatoes: Slowly pour in chicken broth, whole milk, and heavy cream while whisking constantly to prevent lumps. Add cubed Russet potatoes, salt, black pepper, and smoked paprika. Bring to a gentle boil, reduce heat to low, cover partially, and simmer 15 to 18 minutes until potatoes are fork-tender.
- Mash for Rustic Creaminess: Use a potato masher or wooden spoon to lightly crush about half of the potatoes directly in the pot. Leave the remaining half in chunky bite-sized pieces for rich texture.
Melt Cheese & Garnish
- Melt Cheddar & Sour Cream: Remove pot from heat. Gradually stir in freshly grated sharp cheddar cheese and sour cream until completely melted, silky, and glossy.
- Ladle & Garnish: Ladle hot soup into wide ceramic bowls. Top generously with crispy halal beef bacon crumbles, extra shredded cheddar, sliced chives, and fresh cracked pepper. Serve hot with crusty sourdough bread!
