Ingredients
  

Base
  • 1 cup brown rice cooked
  • 1 cup black beans canned, drained and rinsed
Toppings
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup bell pepper diced
  • 1 cup avocado sliced
  • ½ cup salsa your choice
  • ¼ cup cilantro chopped
  • 1 lime lime juiced

Method
 

Prepare the Base
  1. Cook the brown rice according to package instructions.
  2. In a skillet, heat the black beans over medium heat until warm.
Assemble the Bowl
  1. In each serving bowl, layer the cooked brown rice and black beans.
  2. Top with corn, cherry tomatoes, diced bell pepper, and sliced avocado.
  3. Drizzle with salsa and lime juice, and sprinkle with chopped cilantro.
