Ingredients
  

Crust
  • 1 cup Graham cracker crumbs
  • 2 tablespoons Granulated sugar
  • ½ cup Unsalted butter melted
Filling
  • 8 oz Cream cheese
  • ½ cup Granulated sugar
  • ½ cup Sour cream
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
Toppings
  • 1 cup Fresh berries e.g., strawberries, blueberries
  • ¼ cup Chocolate sauce

Method
 

Prepare and Bake
  1. Preheat the oven and prepare mini cheesecake pans.
  2. In a bowl, combine Graham cracker crumbs, 2 tablespoons of granulated sugar, and melted butter; mix well.
  3. Press the mixture into the bottom of the mini cheesecake pans to form the crust.
  4. In another bowl, beat the cream cheese until smooth; gradually add ½ cup of granulated sugar, sour cream, and vanilla extract.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust in the mini cheesecake pans.
  7. Bake in the oven for about 20 minutes until set.
  8. Allow cooling, then refrigerate for several hours.
  9. Serve topped with fresh berries and chocolate sauce.
