  • 2 pounds neck bones cut into pieces
  • 1 tablespoon olive oil for browning
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup potatoes cubed
  • 1 teaspoon black pepper to taste
  • 1 teaspoon salt to taste
  • 1 teaspoon paprika
  • 1 teaspoon thyme dried

Method
 

Cooking Neck Bones
  1. Heat olive oil in a large pot over medium heat. Add neck bones and brown on all sides.
  2. Remove neck bones and set aside. In the same pot, add onion and garlic, sauté until translucent.
  3. Return neck bones to the pot, add beef broth, carrots, celery, and potatoes.
  4. Season with black pepper, salt, paprika, thyme, and bay leaves. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 2 hours or until neck bones are tender.
  6. Remove bay leaves before serving. Adjust seasoning as needed.
