  • 2 pieces Meyer lemons (juiced and zested)
  • 4 cloves fresh garlic (minced)
  • 1 cup low-sodium chicken broth
  • 1 cup golden rice
  • 2 tablespoon olive oil
  • 2 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C) and spray a large oven-safe skillet with nonstick cooking spray.
  2. Pat chicken breasts dry and season generously with salt and pepper. Place in the prepared skillet.
  3. In a bowl, whisk together the juice and zest from the Meyer lemons, minced garlic, honey, Dijon mustard, and olive oil. Drizzle half over the chicken.
  4. Add golden rice around the chicken and pour in chicken broth until just covering the rice.
  5. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Let rest for five minutes before serving, drizzling leftover sauce over each plate.
