Ingredients
  

Crust
  • 1 cup all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1-2 tablespoons cold water as needed
Custard Filling
  • 1 cup milk whole milk preferred
  • 2 tablespoons cornstarch
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large egg yolks
Fruit Topping
  • 1 cup mixed seasonal fruits such as strawberries, kiwi, and blueberries

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Add egg yolk and cold water, mixing until a dough forms. Wrap in plastic and refrigerate for 30 minutes.
  3. Preheat the oven to 350°F (175°C). Roll out the dough and fit it into a tart pan.
  4. Prick the bottom with a fork and bake for 15-20 minutes until golden. Let cool.
Make the Custard
  1. In a saucepan, whisk together milk, cornstarch, sugar, and egg yolks.
  2. Cook over medium heat, stirring constantly until thickened. Remove from heat and stir in vanilla.
  3. Pour the custard into the cooled crust and spread evenly.
Assemble the Tart
  1. Arrange the mixed fruits on top of the custard filling.
  2. Refrigerate for at least 1 hour before serving to set.
