Ingredients
  

Quinoa Salad
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup feta cheese crumbled
  • ¼ cup olive oil extra virgin
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Lentil Soup
  • 1 cup green lentils rinsed
  • 1 medium onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cups vegetable broth
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Baked Salmon
  • 4 fillets salmon skinless
  • 2 tablespoons olive oil for drizzling
  • 1 lemon sliced for garnish
  • 1 teaspoon garlic powder
  • 1 teaspoon dill dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

Quinoa Salad
  1. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  2. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over salad and toss to combine.
Lentil Soup
  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add garlic, cumin, thyme, salt, and pepper. Cook for another minute.
  3. Stir in lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
Baked Salmon
  1. Preheat oven to 375°F (190°C). Place salmon fillets on a baking dish.
  2. Drizzle with olive oil and season with garlic powder, dill, salt, and pepper.
  3. Top with lemon slices and bake for 15-20 minutes until salmon is cooked through.
