Preparation
- Season the beef chuck roast with salt, black pepper, thyme, and rosemary on all sides.
- In a hot skillet, sear the roast on all sides until browned, about 3-4 minutes per side.
Cooking
- Place the chopped onions, carrots, and potatoes in the bottom of the crock pot.
- Add the seared roast on top of the vegetables.
- Pour the beef broth and Worcestershire sauce over the roast.
- Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender.
Serving
- Remove the roast and vegetables from the crock pot and let rest for a few minutes before slicing.
- Serve with the cooking liquid as a gravy.
